// FROM THE BUTCHERY LAMB GHOUZI Popular among Arab families at the New Year, Lamb Ghouzi can also be served at celebrations and holidays throughout the year. For the garnish: · 3 clementines sliced • Handful of Rocca leaves • Handful of roasted almonds INGREDIENTS (Serves 5-7) HOW TO: For the Ghouzi: • 2kg Boneless Australian Lamb Shoulder • Rind of 2 lemons cut in pieces 1 Wash the lamb and make small incisions on it. Marinade with yogurt and keep in the fridge for 1 hour. 2 Mix all the marinade ingredients in a bowl and apply evenly to the lamb. Keep overnight in the fridge. 3 On a deep baking tray, add all the Ghouzy ingredients (except the water) and place the marinated lamb on top of it. Pour in the water and coer the lamb with wax paper • 7 baby potatoes ·3-4 pods of garlic • 6-7 small onions · 5 cinnamon sticks (1 inch) 5 cloves •Pinch of saffron For lamb marinade: • 3 tablespoons Carrefour Natural Yogurt -3 tablespoons Bayara Cumin Powder • 3 tablespoons Bayara Ginger Powder • 3 tablespoons Bayara Turmeric Powder • 3 tablespoons Bayara Coriander Powder •1 tablespoon black pepper •1 tablespoon salt • 1½ tablespoons Soya Sauce •1 teaspoon cardamom • Pinch of saffron •1 garlic clove, grated •1 medium onion, grated · Pulp of 1 lemon, finely chopped • Olive oil as required • 3 tablespoons water • 6 small carrots • 1.5 Itr hot water and silver foil. 4 Cook for 5 -6 hours at 140°C. For the rice: • Ikg Basmati rice • 50ml oil • Water • Pinch of salt • Pinch of saffron 5 Meanwhile, prepare the rice. In a vessel stir the rice with the oil and add hot water, salt and saffron.
