To prepare the salad, wash the cucumbers under cold water and pat dry. Slice as thin as you can. Stir in salt and let it sit for 15 minutes. Drain and squeeze out water from cucumbers. Rinse the fresh seaweed and cut into 2 cm pieces. Combine with the squeezed cucumber in a bowl and set aside. 2. While the salad is sitting, mix rice vinegar, honey and soy sauce together in a small bowl, until it is well combined. 3. Add vinegar mixture together with sesame seeds to the salad and mix well. 4. Mix all ingredients for the sauce. Set aside. 5. Rinse tuna under cold water and pat dry. Evenly brush with sunflower oil, season with salt and grill tuna as indicated. 6. Turn tuna and grill as indicated. 7. Cut at a 45° angle into slices of about 0.5 cm thick. Make sure to cut against the grain. 8. Plate and garnish with the tataki sauce and top with the chives.
